I have to vote for Jonathans for apple pie. They hold their shape well
and have a rich, complex flavor when cooked. I don't know how well they
do in Maine, though.

I've also had very good pies from Cortlands, Macouns (very fresh) and
Northern Spies. Unfortunately, very fresh apples make much better pies
than apples which have been sitting around the house for a few weeks.
On the other hand, you can make great sauce from the left over apples
knocking around. The very best sauce I ever had was from Macouns and
Liberties.
