We test now because we use the same crop of wheat in our milled flour and wheat berries that we retail.  The beauty of trying to keep as much local as possible.  I know the exact ground my mulch AND grains come from.

We do on occasion run into overwintered wheat germinating in the mulch but its easy to pick out.  Wheat, like buckwheat (but for different reasons) will have a lot of widowed seed hanging out that did not make it to the hopper in the harvester.   We fluff the straw a bit before cover the garlic and it seems to eliviate the problem by as much as 90%.  The remaining wheat isn't enough to trouble ourselves over at that point.
