a couple of points i found helpful, (1) pull both sheets at once for if you dont you have a good chance of burning the bottom sheet from the rope when you pull the 2nd over (2) use a long stick, broom, pvc pipe with a rag taped around the end on an old tennis ball on the end to push up the plastic when it gets caught or to just help it along.

I have done it pulling one piece at a time. Tie twine or rope to the
corners, you may want to gather at 2 places also for a 100 ft long piece;
tie about a 1" socket to the other end of the rope. Use the socket to give
enough weight to whip the rope over the hoops/braces/1st layer of plastic.
Folks on one side pull ropes, folks on the other feed the plastic up over.
Around here the aluminum channels that receive zig-zag wire seem to be
popular to fasten it down with. No matter what system you use get it laying
where you want it then start in the center of the sides and fasten to one
end, then center to the other. Button up over the ends last, starting at
the top and working down to the corners. Don't pull it so tight that you
don't have air space to inflate it with. This system seems to provide the
least amount of wrinkles for us.

I've got poly coming on Tuesday to cover my greenhouse and will have extra
hands here to help get it over the hoops and installed.
Can anyone offer suggestions on the logistics and how-to?
There will be two separate rolls for the double layer to be inflated.
Do we put them over one at a time or lay them out and then pull over
together? The poly is 42'x100'

The poly won't cover the ends - they're solid.

If anyone has suggestions on how to attach at the bottom that'd be great
too. I'm thinking of 2x6s with the poly rolled around and stapled with
some
of the batten tape.
