Tan and hard is always better, but if frost is coming, at least the tan ones are edible. If they are still on a dead vine, I'd give them another week or so to see if they harden up, unless you are expecting one of those MN frosts!
BTW, glad to hear that other PA folks are having low yields with Pingtung (sp?) eggplant -- I grew them this year for the first time and I'm getting very little. Usually, my eggplant explode in August, but I'm getting very few. Will keep the seed for next year and try again since everyone is having problems.
