We have a good niche at resturants with arugula (which I am now aware that
$4.00lb is way too low), salad mix @ $5.00lb if they buy 5lbs or more
otherwise it is $7lb, fresh garlic@ $1 per bulb, Shallots ($3lb), baby
squash @ $3.50lb and french beans/haricot verts at $3lb.

At farmer's markets organic eggs @ $2.75 sell well as do the lettuces @
$4lb, salad mix @ $7lb, garlic @ $1ea, bright lights chard @$2lb and
heirloom tomatoes @$1.50lb. We also have raspberries, pears and strawberries
which no one else has at any of our markets.
This year I will try golden beets-I have planted them in the past with bad
results. This year I think they will get planted into soil blocks and
transplanted out instead of direct seeding because they have such bad
germination and I have so few seed-but at least I got some seed today (yay!)
from seed saver after ordering from 3 different companies and finding all
but one were already out.
