These things come up at our markets. Far as I know it all concerns processed
or prepared foods rather than raw produce straight from the farm. Local
agencies have a job to do with restaurants and other food sellers, and it's a
legitimate public health concern. Apparently the commercial kitchen rule is
about having a location that can be inspected as needed. It's a bother I
know, but these kitchens are sometimes available for hourly rent at various
institutions. It's reassuring to know the guy selling burritos & such is
approved by the health dept. and you won't detour to the ER. And it obviously
pays to stay on good terms with the local authorities.

We're not allowed to cut and grill our sweet roasting peppers on site for
samples. Yet they do approve letting the market manager table do that for us.
Go figure. It is a big deal because the flavor or those grilled giant
marconis sells every person who tastes them. And that's at one dollar EACH -
(at that price we can't afford to eat them .. )
