Whatever you're comfortable with. My partner Barb was drying with simple
screening as a kid back in (humid) Connecticut forty years ago. It works.

Right now she just brought me some eggplant parmesan with sun dried
tomatoes in it, so I'll cut this short ... ;-) Anyone want some???
