Another thought: After much consideration,
we've concluded that what we're really doing with drying is reducing the volume
without reducing the nutrition. For safe, long-term, preservation, most
things should be refrigerated or frozen (and/or vacuum-packed). Thus, our
solution is to:
1) Dehydrate produce or partially prepare, such as
cooking down into sauce or stock, in order to reduce its volume
significantly.
2) Freeze in a tightly-packed AC/DC freezer,
to be converted to off-grid solar power when I have time.
