Peas do not need Nitrates of any kind, being as they are legumes and fix their own nitrogen into the soil.
years ago I had started a pea in a pot, and it was doing fine till I watered it with some water with rapid Grow added to it, It dies really fast. Too much Nitrogen, though I didn't know that at the time.
All I use in my gardens is compost and manure, and not really where I grow beans and peas and such.
I need to post one of the pictures of my dad standing in front of my 8 foot tall cherry tomato stands. All we used there was manure, and I added some composted stuff sold as potting soil.
And it was not the first time I had tomatoes growing that tall...
yes, snow Peas should be tender and sweet...
And Cucumbers should not be bitter...

Speaking of brix...I was talking with a fellow community gardener
today, who was wondering why her snow peas were not sweet. So we
taste-tested hers and mine; mine were sweet, hers were more bland and
did have a bitter edge. I grew mine with homemade compost; she used
an organic fertilizer (EB Stone?). We both watered every 2-3 days,
and picked them at about the same size. Maybe hers had too much N?
