Mark, Let them grow and you can add new stuff to the compost pile on top of the potatoes.

Remember potato tubers should be covered anyway.

I have friends that cover their potatoes with straw. Compost should be fine especially if your composting stuff like grass clippings with the vegetable trimmings and coffee grounds.
