Hi Paul,
Are you growing your Concord, or buying the fruit?
I only ask, as I wonder how long the Concord grapes will hang on the vine
after ripe, and if acids will reduce with longer hang times.
My grandmother had Concord, and as I recall their skins were pretty tough,
but I never paid much attention to them, and she only used them for
jelly. In canning acid is a plus.
