Good site, thanks. I don't know of any old pears around here, but my friend's mother in southern Alabama has one. I don't have a clue as to what it is, just that they always can pears from this legendary tree. Of course, that would be zone 8, close to zone 9, so that strain may not work for the colder zones 6 and 7.
My grandmother lived in Norfolk, VA for a while, when I was very, very young. I couldn't tell you much about the house or where it was, but I do recall her kitchen and a HUGE Bartlett? pear tree. We always brought home pears in newspaper.
Why don't you get on a regional gardening list, or put a 'wanted' add on freecycle to see if you can find someone with a tree that needs a little pruning.

This is the place where I took the grafting workshop last winter.They have
tons and tons of old and newer apple varieties. They are also carrying pears

I might take the pruning workshop this winter and if I do, I might bring
home an Atlantic Queen or Jim Pile pear.

If you find any old pear trees on homesteads around you that have great
pears, let me know. If you can get scion wood this winter, I'm looking to do
some grafting of old pear varieties.
