It might make a difference what the modern trees were bred for. Probably the
reason the Bartletts all mature at once is because it is more economical to
harvest a whole tree at once and get it to market. A lot of people think
that modern varieties of produce, in general, look better in the store but
the trade off is a loss of flavor.
I'm sort of bringing this up as something to consider and also posing a
question to those might have experience.
