My maternal grandmother (Deep South) used to order a Virginia smoked ham
every year.  In the very deep south, I remember lots of people having what
they called "smoke houses, but I don't remember one ever using them to smoke
meat.  Maybe for the reason you said (humidity,heat) I don't know...bobf

Probably because I grew up in Florida, we never did that. Heat and
humidity. My neighbor here that is set up to do the hogs let me see in
his smokehouse and it was full of hams and bacon. He does the sausage,
his brother does the smoking. I'd like to apprentice with him for a
season or two.
