Some homesteader friends of mine are redoing the old farmhouse. It has
an open kitchen with room to cook, but also a big table. No dining
room. Sitting at at kitchen table is better and it makes a good work
space when you need it. Deep sinks with high faucets. The triangle
between sink, fridge and stove.

They also have a wood stove that can be used to cook on. Warming and
smart way to cook in the winter. Also makes you want to sit around
that big table.

They have a room off the side of the kitchen that has an extra
refridgerator, a sink, a bathroom and a big incubator. Also this room
has space to be a pantry and work area.

Even though you might be up north a separate canning kitchen is
probably a good idea. Anything you can do to keep heat out of the
house in summer is a good thing. Here in Virginia, older houses had
the kitchen as an "add on" room on the back of the house. It's one
story with a separate roof so heat can disperse.

In Florida, older houses had a breezeway passage to the kitchen wing.
Heat was the issue. In NY, you probably want the heat more or the
year, but being able to not heat the house is a great option!
