Did you look at my house on my web page? The old part of the house was built in 1785. That part of the house is not humid. The new part of the house, wherein lies the kitchen, was new built in 2002. It is humid all year round, even if you run the ac. When we first moved in, we had no clue which of the 5 heating systems actually ran, and if they did, what they actually heated. Or cooled, for that matter, there are two of those someplace. We didn't even know for some months there were space heaters built in under the kitchen cupboards, I thought they were just normal vents. I never saw the on switches behind the decorative grates. Buying an old home is a bit like buying a jigsaw puzzle.

Gene, if I canned all my salsa, I wouldn't get to stand in my kitchen with my kid and MAKE it. Instead of my current relatively free "therapy" of blasting some great music and dancing around my sunny kitchen making messes, I'd open a jar and then what? Jaysus, I might have to clean, and that's a fate worse than death. I'd rather keep things in their purest possible form so I can keep dabbling. : ) I did, however, totally cave on cilantro and basil ice cubes. Yum. Since I am the black thumb of death, this is a great way for me to use up the bunches I get at the farmer's market.

It is very humid in southern Missouri, most especially on a warm day
following rain. But I asked Moon if it was humid in the wintertime. In
the house at Heartwood the air is dry during the winter, for two
reasons: cold air holds less moisture, and heating fires drive out
moisture. Furniture is ideally designed to handle summer wood
expansion and winter wood contraction. Hell on wood joints.
