Grady...thanks for the recommendations...we'll definitely try the tofu
hut place with veggie broth. Mr. James, I already got the link to that
article from another person, and let me just say it has explained a lot
about my life.
Re; rice milk, I think I tried Rice milk Russians, and though I like
the alliteration of the "r's," , it isn't quite fatty enough for me. I
bet a Horchata Russian would be great though. Speaking of fatty, I did
end up writing the piedmont and paste their response to me
below...maybe I can get them to serve this instead:

Eleni, thanks for writing. I happen to agree with you, and won't eat
foie gras, and most meat. It's of the utmost importance to me not to
ingest meat or dairy that has been cruelly raised, killed or obtained.
What's MORE important to me, however, is not imposing my views on
others...in this case my business partners. As chefs, they have the
right to choose to serve foie gras among other things. They don't
share my views on foie gras (though they do on using local meat, dairy
and produce) and I don't see it as my place to change their minds.
They have the facts, we all do, and we must do with them what we will.
For me, abstaining is enough. For you, it obviously isn't, and I'm
sorry that means you won't be joining us at Piedmont. That's you
choice, and I certainly won't try to change your mind either....
