You can also take advantage of bulk buying from area farmers so you can eat local produce this winter. Most people think that putting food by involves canning or freezing, but you can also keep some produce for quite some time through proper handling and storage practices. You may not have a root cellar, but there are easy ways to store roots and apples even without. Cooperative Extension will be holding a class on Wednesday, Sept. 14, 6-8 PM, that covers all the ways to store fresh produce so that it will last for some time into the fall and winter. Topics covered will include harvesting practices required for some crops to keep them in good condition, how to store in heated or unheated spaces in your home or garage, and how to build a root cellar. Techniques for storing will be demonstrated during the class.
