but this seems to be discouraged and I don't see the point in this rsyncing
since I don't intend to _replace_ the running system (just installing on
local hard disk or another NFS share).

Which looks a bit like being applicable to my aim... is there some better
place to look or should I just get started with my background and hybris from
some LFS and gentoo installs?

Probably, I'll get started anyway now; but maybe some response will help me
when I eventually will encounter the unavoidable wall that wants my head
banged on.

You could just use the Sorcery INSTALL_ROOT functionality
(http://wiki.sourcemage.org/install_root_and_others) to install to a
partition/directory for chrooting into later.
