This is a good use for it. Alternatives might include renting a backhoe/loader to move it (to where?) or burn it (not a good option unless its recycled as firewood).

As for plantings along the creek I would think willows are a
particularly suitable species.

Also sycamore and river birch, elderberry, maybe black cherry and bayberry (maybe too cold in Ky for it).

Willow thrives in wet conditions, is quick growing and has a very high
proportion of root
mass, making it particularly suitable for ground stabilisation. It also
tolerates flooding and willow shoots are easily obtained and planted
(simply stuck in the ground during dormancy).
