I wonder if the freezing might have freeze-dried them, so there was less
liquid to produce syrup and make the pectin available? That's curious.

I picked Rosa canina in England and made rose syrup. I was intrigued to
find that after a hard freeze, they did not make syrup anymore, instead I
got a residue that settled out and looked like the vitamin C tablets with
rose hips in them. Something about the freezing may have destroyed or
inactivated the pectin in the hips? It was fun but I don't know how much
they would like your climate. Donna
