I only have one year of experience at this under my belt, but here's my
process:

Stick 'em in the fridge buried in peat/soil/sand mixture, damp but not too
damp.
I did this right after harvesting them from the fruits, around
Thanksgiving I believe it was.
I didn't take them out until late spring, maybe middle of May?

I put them in pots, and sprinkled about 1/4 inch of soil over them.
Got busy, and forgot about squirrel protection. So I cam back to dirt
everywhere,
and no persimmon seeds in sight. Oops.

However, I then used the dirt in other pots because I thought all was lost,
and ended up with about 10 persimmon seedlings coming up nice and
strong in the middle of June in various pots. I probably only had
about 15 seeds total, so this seems pretty good germination,
considering. ;)

Well, I've also heard that it's difficult to get persimmons to
germinate, and the one thing that I think helped with my success was
the temperature. I've read that they like really hot weather to
germinate, like in the 90's maybe even, which doesn't really happen
where I'm at, however this summer was extremely hot for around here,
consistently in the 90's in June and July, normally this would only
happen in August.

So if you have a greenhouse, or can even make a little coldframe, and
keep the soil nice and warm, I suspect that would help.
