Depends on the region.
One thing that is pretty much fixed is that most consumers insist on seedless grapes, to a degree that I get annoyed at because there are some excellent seeded grapes. Even in the grocery stores, the vinifera grapes from California and Chile are all seedless, with the exception of Redglobe, which is sought more because it is big and showy than anything. 20 to 30 years ago there were many excellent seeded grapes in the stores.
Most of the older "antique" grapes have a Concord-like flavor (flavor of Vitis labrusca), while many of the new American hybrids have little or none of that flavor. While older folks often still like labrusca grapes, people who have grown up with grocery store grapes usually don't care for that.

Could you elaborate on that a bit?
Do you meant the the consumers tastes are changing or
expanding and wanting something different? Do you mean
the varieties that are being made available are
different than old varieties, so that the taste is
being lead by what breeders are now offering?

What flavor characteristics do consumers now look for
in good table grape?
