I worked for a berry nursery at one time and we stored raspberry roots
in a cooler in plastic bags with wood shavings to keep them moist.
Essentially all you need is to keep them moist and cold, as close to
freezing as possible, and they will keep for months. At worst, you'll
see little white sprouts start to show on them in places. Just means
it's time to plant them. You can even pot them and hold the pots in an
unheated building where they won't freeze solid.
