I have an American Harvester. Comes w/ 4 trays, can buy expansions. Things
I like about it (some of these may be extras you would have to purchase.):
Temperature adjustable. The temp you want to dry jerky at is higher than the
one you would dry herbs at. The AH allows this adjustment.
Expandable - I thing 12 trays is a limit.
Mesh inserts -- for sticky or small items (thyme leaves) that insert into
the standard tray.
"Saucer inserts" -- for drying sauce-like or pulpy things.
Possible disadvantage: Dehydrator is round (for even temp distribution).
Some more "professional" dehydrators are square in shape.
