I bag and label my lettuce and put out only 10 or so bags at a time and the rest remain in coolers. The lettuce guy at this market displays his lettuce in coolers on the ground. they are packed around 40 to 50 to a cooler and since they are so wet I believe he uses ice under neath the heads. His lettuce stays pretty fresh for about 3 hours but i also know because he does not hydro cool nor refrigerate before market (he keeps everything in the iced coolers over night) that his lettuce does not last more than 5 days in the customer's fridge. Whereas my lettuce that is washed, refrigerated and bagged will last up to 18 days in my customer's fridges
