How old are the kids? We started doing chores at age 5, like cleaning the bathroom and lunch dishes. I was a city kid, so no farm chores.
Yes, it is a challenge, but I have a daily schedule that clearly allots time for 'squaw' chores. I also have an extra freezer so I can cook extra in the winter and have meals to just pull out of the freezer in the summer. It also allows me to use rainy days to bake bread. This winter I learned to can spaghetti sauce and some other quick dishes. Good food grown on our farm, not store bought junk. I am hoping this will help us eat better in the summer, busy time. Eating poorly robs us of energy, then I don't have the energy to create good food, then we eat even worse.........
While I don't have kids, I did build my place by myself and took care of a hubby that worked way too may hours in the oil field. This included delivering food to him on oil field locations when the company either didn't bother feeding them, or offered food of such poor quality the man was afraid of getting sick if he ate it. The 19 years he worked for the company he averaged a 70 hour week, not including commute time.

In the summer I use my crock pot, and oven timer a lot. Set stuff up ahead of time, so I can go out and work. Come in and dinner is on the table in 5 minutes. I have found it is about organization, planning ahead, and thinking about how much time is needed to prepare different meals. Once a week I do try to schedule a meal that actually requires me to be in the kitchen for 30 minutes before serving, but I don't always make this goal.

For example, I can have eggplant parmesania on the table in less than 5 minutes. I cook the eggplant, freeze it spread out on trays, then bag it up. Pull one out, open a can of my own tomatoe sauce, add my own dry herbs, add grated cheese and either microwave or put under the broiler for a few minutes. Very quick and works well.

But then, hubby comes home and decides to water something out of sequence, or it rains, or whatever the latest catastrophe might be around here. Am I the only one who has a hard time with housework, laundry, cooking, grocery shopping during the busy time? We don't hire any labor and with the two of us, me full time here and hubby here after 6 in the evening and 5 acres, well, I can't ever seem to get it all done plus take care of the house and kids.
