Hello,
       Two questions please. How does one harvest horseradish and still leave enough root/plant to continue growing? and does anyone have a good recipe for sauce I can send to family and friends for the holidays?

In New York I suspect you would need a processing license to do that. (Though you could have sold me a couple of them anyway . . . )
