Good morning all:

I finally got around to email, so this may be old information. I buy
berries from Willie during the season and freeze them for use in the
making pies and my Blackberry Basil Vinaigrette products during the rest
of the year.

I do not wash the berries, and I just weigh out the appropriate
quantities for each type of product I'll be making. I put that into a
Ziploc (not even in a single layer); tho' I do take care to lay the bags
flat in a single layer on the freezer shelf. Once frozen, I stack them
up as high as four bags to a stack. The berries come out beautifully -
this could be because Willie grows such beautiful berries, and they're
always so fresh when I get them from him...Thanks to you Willie!

When I thaw the pie berries they remain in very good shape (unlike other
berries that get all "shlumpy" and mushy). I put them into to pies as
is, and always have great results tho' they do give off a lot of juice.
This is a common theme with frozen berries however so not too
surprising.

For the vinaigrette I place the berries in a large pan with just enough
water to keep them from burning. I simmer them for half an hour, mash
the berries with a potato masher, then skim all the berries up into a
net bag (and I use inexpensive netting that you can find at your local
fabric store). I hang this over the pan to let it drip until all the
juice is captured. This method will also give you juice for jelly, and
it can be frozen until you are ready to use it.
