Well, the same thing has happened to me with both chickens and ducks over the past several years......in asking the old timers around, I was told either mink, racoon or possum (no one mentioned weasels).  Don't even know if minks live in N. Mississippi.....
 
    I wasn't so sure of their answers, but since I couldn't sit outdoors watching 24/7 and don't know how to shoot a gun, I considered have a heart traps, but then decided (since I have rare ducks) to go with Premier Poultry netting AND a Great Pyrenees.   So far so good, but this has only been since March 2005.  Will await others' answers eagerly!

. With no bites, feather piles, or marks, I never
suspected animals. Thanksgiving night the other 10 were all killed inside the locked pen. There were no gaps that I could find. The drainage rock had not been moved. 2 heads were eaten, and the rest lay dead, again with only
scrapes  on their nec ks. What did this? My neighbor said a mink can fit through
1 in wire, but could it get back out after eating 2 heads? I couldn't even find any fur anywhere on the fence wire. Needless to say, there's no point in my having ducks until I can find out what this is and kill
it.
