Matt, I can't remember how "South" you are.  Tomatoes play out and are better replaced.  We do have some peppers in the Tunnel that are about 4 years old - 6 feet tall.  They are a problem since they flop all over the place, but some are still producing big bells.  The poblano croaked this spring and one of my prized red bells has mutated and makes scads of 1 inch minis - which are delicious pickled.  All in all, replace the tomatoes in the fall, keep the peppers and eggplants as long as they are manageable.  Then replace.  We're in northeast Texas and we look at it as two growing seasons - spring and fall - with another season in a semi-heated tunnel.  An annual is an annual - it produces fruit and seed and then dies.  A perennial is a perennial, even if "tender" and will live until killed by cold or disease.  then there are short-lived perennials like artichokes and long-lived perennials like asparagus...You get the idea - it's all individual.
