Ideally, of course, you would take the cost of production and mark it up for
your profit. In the real world, here's what we do. We go to a grocery that
has good produce and mid-range prices. We look at their produce and the
pricing. If our produce is comparable, we set our retail (farmers' market,
email) pricing about the same. If our product is much better (and it
usually is), or out of season, or something the customer can't get anywhere
else, we set prices above grocery store. In our area, "organic" doesn't
mean a lot, but local and fresh do. We occasionally get a customer that
complains about our prices (typically the highest at our market, sometimes
by a lot), but most are pleased to get such quality for a bargain price and
we know we can't please everyone and still make a living.
