Check out the Rolling Prarie Cookbook for a few simple ideas on using Bok
Choy (AKA Pak Choi, Pak Choy, Taisai).
Store unwashed bok choy loosely in plastic bag in fridge. Not quite as
durable as head cabbage.
Tear stalks away from base and wash carefully. Spearate leafy greens
from stalks because they cook differently. Cut leaves into ribbons or
chop coarsely for stir fry. These are added in last moments of cooking -
they take only a couple minutes to wilt. Use stalks in stir fry the same
way you would celery - slicke and add sevral minutes before the greens.
