And there is also the fact that a lot of nutrients are lost during canning, especially if you are using a pressure canner at high temperatures. Canning has its place, but I do more drying than anything else. In spite of the warnings that dried foods have to be refrigerated, I've never had a problem with anything that was kept sealed away from humidity.
