The corn on my Illinois farm is 6-7' high at maturity........no knee high stuff

Well, since I have spent considerable time living in both Illinois and Texas, I can assure you that Texas farmers grow acres of the stuff, too.  I lived in Illinois until I was 30. 
 
I used to think about how odd it was that the corn was done by the time it was knee high in Illinois.....or close to it....because of the climate differences.  That may be why you haven't seen the corn growing. The farmers may have already planted another crop by the time you came through Texas.  It is planted here right now.
