I'm pretty much a year round griller and love to cook anything from burgers and hotdogs to prime rib roasts on the grill. I would recommend a model with at least 3 seperate burners. The reason being is that often you want to do "indirect heat" for port or large cuts of meat. The idea is place the meat on the grill and turn the burns on directly to either side but leave off the burner that is directly below the meat. This is a great way to cook pork and large cuts of beef that need longer grill times and you don't want to char the outside.

Beyond that, high heat and good control. Look for heavy porcelain or cast iron grates which are good for searing.
