All grape leaves work. But for blocking pectinase it is muscadine grape
leaves that are the most prized and are used to produce commercial tannins
for
that purpose. I've used concord, catawba, and fredonia leaves for pickles,
stuffed grape leaves, and other kitchen uses and can vouchsafe for them.
