Hey Clint!
Good luck on your property search. As for why properties remain listed after
they are "sold" - it may be that the properties you have heard were "sold"
were actually "sold pending" and had a contract for sale. Many sellers
(myself included) do not want to remove the property from the market while
the contract is pending. If the buyer backs out and the closing does not
happen, continued listing of the property while the sale is pending may mean
that another potential buyer may make an offer should the buyer back out of
the contract.
I love Missouri so far (just moved).

"just sold the property" or they just plain never get back to me, yet
the property will remain on the mls for months after it's been "sold".
Maybe this will be the time it all comes together, reguardless we still
enjoy the river trips and walking the properties, doing some
daydreaming.
Anyone that has any advice, observations, etc.., feel free to comment,
we can always use additional input.
