Thanks for posting that, Bev. Once again, whom to believe?
It's no big surprise that raw soy inhibits thyroid production. That's
been known for years, and it's why uncooked soybeans aren't used as
animal feed. I understood that heat treatment was supposed to
inactivate the thyroid inhibitor, but maybe it's more complicated.
OTOH, all those tofu-eating Chinese don't seem to be dying off in
hordes.
