I have used this RadioShack device, plugging it into my computer's soundcard, recording the phone interview into Audacity. It worked in a dandy fashion.

I then slowed down the audio to transcribe it. Which took me forever. At the end of the experience, I though both me and the subject were really dumb sounding. Then I listened to the audio at standard speed, and felt better.

Quite possibly a cheaper version of what Mr. Rossi is recommending? A
friend had pointed me toward it as a means of more directly going from
phone to computer. I have long used the "cassette recorder leaning over
next to the speakerphone" method and it works to a degree. But let's
just say the fear of ambient sounds has led me to look for
alternatives.

You plug your phone through it and you get a regular audio out you can
plug into your recorder of choice.

There are a couple of other options on the right.

Googling broadcast supply will bring up other broadcast supply houses
and you can see what devices they have that do the same thing.
