In my work I've been using an older version of that Radioshack gear, and it's worked just fine. I hook it up to a relatively old Olympus DM-1 digital voice recorder, and it's just fine. MP3's served up fresh.
Just in case, here's a great link for current laws on telephone recording, updated pretty often.

Gentlemen:
Many thanks for the tips. On the off-chance that someone else might
find this string useful, I'll add this one to the mix:

Quite possibly a cheaper version of what Mr. Rossi is recommending? A
friend had pointed me toward it as a means of more directly going from
phone to computer. I have long used the "cassette recorder leaning over
next to the speakerphone" method and it works to a degree. But let's
just say the fear of ambient sounds has led me to look for
alternatives.
Many thanks,

I imagine you want something like this:

You plug your phone through it and you get a regular audio out you can
plug into your recorder of choice.
There are a couple of other options on the right.
Googling broadcast supply will bring up other broadcast supply houses
and you can see what devices they have that do the same thing.

Hello, all.
I am in need of something that will allow me to simply record telephone
conversations and render the resulting sound files as MP3s. In the
journalism old-school, people had a little suction-cup tapper they'd
put on the phone while hooking the other end to a cassette recorder.
The new-school digital voice recorders seem great--and I'm on the verge
of buying one--but can anyone splain to me how I could best capture
that elusive voice on the other end of the line?
Thanks, and happy holidays.
