Well - if it's plain text it won't have colours, because plain text is just
ASCII text - no fancy stuff.
Having said taht, there are various formats which allow text to be 'marked up'
with presentation information. HTML is one. groff (which man pages use) is
another.
If you cant an editable version of a manpage, use
man foo > bar.txt
This creates a bar.txt file which you can edit. There will be some funny
characters in there (used by the formatter), but you should be able to delete
whole chunks you don't want.
Then you can view the files with less.
