Sure God uses 'ani (see, e.g., Gen 9:12; 15:17; 17:1, 4; 18:17; 28:13; Exod 6:2; et passim).

Many, many people use 'anoki other than God:

Adam (Gen 3:10)
Cain (Gen 4:9)
Sarai (Gen 16:5)
Hagar (Gen 16:8)
Abraham (Gen 21:24; 23:4)
Abimelech (Gen 21:26)
A servant of Abraham (Gen 24:13, 27, 34, 37, 42, 43)
Rebekah (Gen 24:24; 25:22)
Esau (25:30, 32)

And we haven't even left Genesis...

When G-d talks first person, doesn't He usually say "Anochi"? Does he ever say "Ani"? Who else besides G-d says "Anochi"? Asking seriously, I don't remember the entire Torah by heart.

Could that just be the distinction, that, if you don't want to accept that the Torah was written by G-d, you might miss?
