Cheese folks buy tote like the Buckhorns that have molded styrofoam inserts
and a separate plexiglass top. Open the tote, put the clear top on. They
are expensive, so I saw one person had taken the regular Buckhorns, cut foam
insulation for bottom, sides and top. At market, open the lid, take out the
top foam, put on the clear plexiglass top. Glue or screw a knob in the
plexiglass to make it easy to take off for product.

I'm cutting early in the mornings, hydro-cooling and it goes into our walk
in cooler immediately. We then pack it all into ice chests and take it to
market. We can keep it cool at market, as long as it stays in the ice
chests. I've tried selling it from the ice chest with big signs on them, but
people are shy about opening up a ice chest and grabbing a head of lettuce.
So, we try and display. We don't sell the displayed lettuce, we pull fresh
heads out of the cooler, but it's trying to keep the display looking nice
that is the problem. It wilts, I pull it and put out a fresh head, and by
the end of market, I've lost a lot of lettuce. Everything is shaded, but the
wind! We sell heads (of lettuce) and some are too large to go into the 5 a
day produce bags. We have to put those heads into t-shirt bags. Maybe there
isn't a solution. Move someplace where there is no wind maybe?
