The zigzag form is also very useful for making a one-brick-thick wall very strong as well as making lots of great edge for planting and microclimates. I've got pix of a couple in my Patterns slide show.

Also I should have said that I planned a berm and earthen (or other) walls (with plantings upon them) for sound barriers. I do, in addition, intend to use vegetation to support these initial structures in doing their job. Sorry for the poor phrasing.

I seem to remember a zig-zag shape for a noise reducing wall (composed
of a suitable material), so that the sound waves cancel each other out
(in principle). The opposite effect is achieved in concert halls.
Rushing water is a good idea, I'll bet.

Vegetation is not very effective at blocking noise unless it is dense and
20-40 feet wide. Ten feet of dense hedge helps some, but loud noises like
traffic, dog barks, or animated conversations will penetrate it easily.
For
an effective barrier, you'll need something solid. Two thin walls with an
air gap between is very effective.
