Jay,
My understanding is that Elderberries have several cyanogenic compounds in
them that are harmful to varying degrees until subjected to heat, i.e.,
cooked. (The leaves can also cause a contact dermatitis in some people,
although I don't know which compounds are responsible). These same compounds
are a defense against herbivory. The material I read says that deer are
negatively affected by these compounds which are found in elderberry bark,
too.
Those of you who grow elderberries..... do they suffer from deer browse?

I once got violently ill after eating elderberries right off the bush.
Days later, when I had finally recovered, I did some research and found
that the elderberry stems contain a toxin. I had stripped the berries
right off the clusters with my teeth (Ok, it was really hot out and I
was really parched and I didn't have the patience to pick one berry at a
time.)
Any run into this? When you mentioned bits of stem being included I
thought of this.

Jay

Elderberries this year. The wild patch I collected from last year is almost
eaten bare. The few wild bushes on my property are bare. Another patch I
found earlier in the year that I looked in on a few days ago: bare. I
haven't seen the dark clusters on the roadside elders either, which leads me
to suspect they've been eaten up too. I really hope I can scrounge enough
this week to make medicine for the winter! Otherwise I don't know what I'll
do come flu season.
