Mark,
I've my Kiowas that way - headed 'em at about 4 ft. Didn't need any support/trellis - they stood fairly well on their own, but I'll admit that they were *sort of* supported - and had most wind blocked by the three rows of asparagus immediately to the southwest of them. Of course, I had blackberries popping up in the asparagus bed, within a year or two.
