There is nothing written that says you have to make 5 gallons of wine at a
time. I usually do, because that's the size of my carboys, but I also have
one smaller carboy that is about 2.7 gallons. Many people make wine one
gallon at a time. There is something to be said for starting out small,
since losses will be less in the unlikely event the experiment fails. You
can use any container for making wine so long as you can fit an airlock to
it. You might want to visit a local winemaking shop or look around online to
see what is available along these lines.
There is also no rigid requirement for using pure cherry juice in winemaking.
In fact, most wine recipes call for about 1/2 pure juice and 1/2 water. I
used pure juice only because I had so many cherries and thought it would
produce a richer tasting wine, which I am sure it does.
