I remember seeing folks down in
mexico roasting them over a flame so the spines will burn off quickly and
easily, without any risk of getting them in your skin. I think this is
probably the easiest way to despine them.

it is delicious. And there is no need to peel it, simply scrape the
spines off, cut it into ¼" to ½" strips, boil until tender and enjoy.
