Mainstream grocers typically want things like they are used to receiving them through wholesale distributors. Co-ops and other small, independent stores are typically more flexible and sometimes look favorably on growers who can supply things in unique, smaller case sizes.
The book "Wholesale Success" published by a local foods organization in Chicago (FamilyFarmed) is a good resource. It is $50 plus shipping and handling.

It has harvest, post-harvest, grading, and packing guidelines for lots of different crops although for non-standard crops, the information is incomplete. For example, there is plenty of info on packing things like broccoli and tomatoes but less on things like fennel (mainly because there are generally fewer specifications for less standard items).
The book also has sections on marketing and food safety.
